A lede page I created for a multimedia story I produced over the summer. Joe wants to stay in his home even though NYC is pushing to redevelop Joe’s neighborhood, Willets Point. He is the only resident, and does not want to move.
No animals were harmed…no humans either. Only some beets that had gone soft while we were out of town. Soft beets are ok to eat, as long as they are not “muddy” inside. So I threw ‘em into our juicer. I really enjoyed the earthy sweet juice that colored everything purple. I mixed the beet juice with VitaCoCo.
Mum suggested that we use the fat bulb end of the scallions as onions, which turned out to be a tasty tip.
Week 4: 1 Lilac pepper, 2 lbs summer squash, 2 pickling cukes, 2 eggplants, 1 fennel, 1 bunch spinach, 1 boothby yellow cuke, 1 bunch parsley, 1 bunch scallion, 1 bunch radicchio — you’ll notice no radicchio, I took advantage of the swap bin and traded for some more pepper. I traded the scallion for more fennel. Which raises the question, what do we do with fennel?
tip: separate the thick stalks from the leafy bits and cook them first or separately.
